Our story
One kitchen, four coppers,
and a lot of stirring.
P-Mind Goodies began in 2016 in a rented commercial kitchen with one tempering machine and a stubborn conviction that most boxed chocolate is a disappointment dressed up in a ribbon.
We still make everything the slow way. Ganache is cooked in small batches and rolled by hand the same day. Caramel goes into a copper kettle and gets stirred until it is right, which no timer has ever been able to tell us. Bars are tempered, moulded and snapped out by people, not machines.
It means we make less than we could sell. We have made our peace with that.

How it is made
Three days, start to finish
01Roast and crack
Beans come in as single harvests. We roast light, crack, winnow and mill to a paste over about eighteen hours.
02Conch and temper
Three days of conching takes the edge off the acidity. Then it is tempered by hand and poured, which is the part that cannot be rushed.
03Fill, dip and pack
Centres are piped, left to set overnight, dipped the next morning and boxed the same afternoon.
